Layer your favorite toppings onto slices of roasted eggplant—the possibilities are endless!


  • 1 large eggplant
  • 1 Tbs olive oil
  • Salt to taste
  • Pepper to taste
  • 1 6 oz can tomato paste
  • 1 14 oz can fire-roasted tomatoes
  • 1 Tbs minced garlic
  • 1 tsp Italian seasoning
  • 1 1/2 cups shredded mozzarella cheese (or cheese of your choice)


  • Slice eggplant into discs.
  • Rub with olive oil and sprinkle with salt and pepper.
  • Bake for 20 minutes at 400°F.
  • Flip eggplant.
  • Spread eggplant slices with tomato paste and pile on fire-roasted tomatoes (drain if runny).
  • Top with garlic, Italian seasoning, and cheese.
  • Bake 10 minutes more.
